Quick-Freezing Cold Storage Industry

★ What is a Quick-Freezing Cold Storage?

A quick-freezing cold storage is a specialized facility designed to rapidly lower the temperature of food through the maximum ice crystal formation zone (-1°C to -5°C), completing the freezing process when the core temperature of the product reaches -18°C. The temperature range for quick-freezing cold storage typically falls between -15°C and -35°C, making it widely applicable for the rapid freezing of food, pharmaceuticals, medicinal materials, and chemical raw materials.

The core value of quick-freezing lies in its ability to minimize the physical (volume changes, thermal conductivity changes), chemical (protein denaturation, color changes), cellular, and microbial changes that occur during freezing. Rapid freezing preserves the original nutritional value, flavor, and appearance of food to the greatest extent upon thawing. In other words, quick-freezing is about "locking in freshness" rather than simply "freezing solid."

Large-scale quick-freezing cold storages are often built in combination with low-temperature storage and ambient storage facilities. For smaller-scale needs, modular (prefabricated) quick-freezing cold storages offer advantages such as lower investment, faster construction, and complete functionality.

★ Differences Between Quick-Freezing Cold Storage, Refrigerated Cold Storage, and Fresh-Keeping Cold Storage

Many clients are unclear about the distinctions between types of cold storage. Here is a clear breakdown:

1. Fresh-Keeping Cold Storage

Temperature: 0°C to 5°C

Function: Puts agricultural products into a "dormant" state to preserve freshness and reduce nutritional loss.

Application: Fresh produce with high respiration rates, such as fruits and vegetables.

2. Refrigerated Cold Storage

Temperature: -15°C to -18°C

Function: Long-term stable storage with occasional inbound and outbound inventory movements.

Application: Meat, aquatic products, frozen foods—commonly used in supermarket cold storage.

3. Quick-Freezing Cold Storage

Temperature: -25°C to -35°C

Function: Rapidly passes through the ice crystal formation zone to lock in the original quality of food.

Application: Food, medicinal materials, and chemical raw materials requiring rapid freezing.
