★ What is a Quick-Freezing Cold Storage?
A quick-freezing cold storage is a specialized facility designed to rapidly lower the temperature of food through the maximum ice crystal formation zone (-1°C to -5°C), completing the freezing process when the core temperature of the product reaches -18°C. The temperature range for quick-freezing cold storage typically falls between -15°C and -35°C, making it widely applicable for the rapid freezing of food, pharmaceuticals, medicinal materials, and chemical raw materials.
The core value of quick-freezing lies in its ability to minimize the physical (volume changes, thermal conductivity changes), chemical (protein denaturation, color changes), cellular, and microbial changes that occur during freezing. Rapid freezing preserves the original nutritional value, flavor, and appearance of food to the greatest extent upon thawing. In other words, quick-freezing is about "locking in freshness" rather than simply "freezing solid."
Large-scale quick-freezing cold storages are often built in combination with low-temperature storage and ambient storage facilities.
