Meat cold storage (including chilled meat storage and frozen meat storage) is suitable for the processing, retail, and wholesale of meat, seafood, and poultry. Frozen meat products must be transported and stored at temperatures below -18°C. Poultry should be stored in airtight packaging below -18°C to prevent fat oxidation, dehydration, and the growth of spoilage bacteria.

★ Frozen Meat & Freezing Rate
The freezing rate directly determines meat quality:
Slow Freezing (0.1–1 cm/h): Leads to a decline in quality.
Moderate Freezing (1.1–5 cm/h): Produces acceptable results.
Quick Freezing (>5 cm/h): Yields high quality with minimal weight loss.
For example, freezing half a side of pork from 0–4°C to -18°C within 20 hours achieves the best quality. Internationally, forced-air blast freezers are commonly used, with freezing temperatures around -23°C and air velocities of 0.5–2.0 m/s, ensuring the deep muscle tissue reaches -15°C within 24 hours. With technological advancements, this time can be shortened to as little as 12 hours.
